Halloween: Cheesy Guacamole Lanterns

Today I have a bit of a festive post for you all as Halloween is creeping up on us rapidly. Normally I'm not one to celebrate Halloween as I don't care much for scary things but I though seen as I have a blog this year I would make more of an effort. I'm hoping to get some family friendly Halloween ideas out there, so this one is just the beginning! Now, the question is, do you like guacamole? If so, keep on reading!



Ingredients and tools you will need:
- 2 Avocados (ripe)
- 100g Primula (Original)
- 1/4 Red Onion (finely diced)
- 1 Tablespoon Olive Oil (extra virgin)
- Juice 1/2 Lime 
- 4 Peppers (orange or red)
- Bowl
- Spoon
- Fork


Step One:
Cut the avocados in half, remove the stone and scoop the avocados from the peel. You will then need to mash this in a bowl with a fork to your desired texture. I left mine still slightly chunky!


Step Two:
Now comes the cheesy part! Add your Primula to the bowl and give it a mix! This gives the guacamole a nice creamy consistency and is a nice spin on average shop bought guacamole!


Step Three:
Add your olive oil and lime juice. Once again, give it a quick stir!


Step Four:
Add the onions and chilli and combine into the mixture. This should leave you with your final product, all ready to eat! You can eat it like this, or you can follow the next steps and make it Halloween ready!


Step Five:
Remove the lid of your pepper and scrape out the insides (seeds and all). Then, go crazy and carve what ever face you like into the side of your peppers (try to get peppers that stand up). 


Now you're ready to fill your peppers with that home made guacamole and serve them up! These would make great table foods for a Halloween get-together or would just make cute Halloween starters for you and your family!

This recipe would probably be more aimed at the adult guests (as I for one, don't know many children who like guacamole!) but would still be fun to get the children involved in the making process as it is mostly just mixing and there are no hot ovens involved!

Super-Safe Sparklers (Bonfire Night Themed)

Ingredients and tools:
- 4 Breadsticks (or desired serving)
- 150g Primula (Original)
- 60g Bacon Crumble (cooled, crispy bacon placed in a freezer bag and crushed)
- 60g Onion Bits
- 30g Pistachios  (chopped)
- 2 Rosemary Stems (chopped)
- Dried Red Chilli Flakes (sprinkling)
- Baking Tray
- Knife

Method:
- Scatter the dried ingredients onto a baking tray and mix.
- Apply Primula Cheese to the breadsticks and smooth with a knife.
- Roll breadsticks through the topping(s) and enjoy.

Mummy's The Best

Ingredients and tools:
- 4 Slices of Bread
- Primula Cheese with Ham
- Tomato Puree
- Halved Olives (Stuffed)
- 3" Round Pastry Cutter
- Baking Tray
- Knife

Method:
- Toast the bread (to your desired colour).
- Cut circles in the toast using a 3” pastry cutter .
- Top with tomato puree using a knife to spread.
- Bake in the oven at 200°C for 5 minutes.
- Mummify your toast using Primula Cheese squeezed in stripes to look like bandages.
- Place your olives on top for eyes.
- Enjoy!

Stuffed Sweet Potato

Ingredients and tools:
-  4 Sweet Potatoes
- 1 Tube of Primula with Chives
- Crispy Bacon
- Olive Oil
- Chopped Chives
Method:
- Preheat the oven to 200°C, gas mark 6.
- Prick the skins of the sweet potatoes all over with a fork and rub with a small amount of olive oil.
- Place potatoes on a baking tray and bake in the oven for about 45 minutes or until tender.
- Towards the end of the cooking time, preheat the grill to hot.
- Place your bacon strips under the grill and cook till crispy.
- Remove potatoes from the oven and leave to cool for a few minutes.
- When baked, cut the sweet potatoes in half lengthways and keeping the skins intact, scoop the flesh from the sweet potatoes into a bowl.
- Add your Primula with chive to the removed sweet potato and mix.
- Stuff your cheesy mixture into the skins.
- Add crispy bacon and chopped chives and serve
